These Lemon Poppy Seed Protein Bites are the perfect little protein-packed treat. Fresh lemon flavor, easy to make, with NO BAKING required!
I love to make protein bites! They require few ingredients, no time to make and perfect to grab and go. Enjoy them as a quick pre or post-workout snack or have a couple with your morning coffee.

WHAT INGREDIENTS DO I NEED FOR LEMON POPPYSEED PROTEIN BITES?
- 1 cup almond flour
- 3 tablespoon coconut flour
- 1 scoop vanilla protein powder: I often go between Orgain – vanilla bean and Earth Chimp – plain & unsweetened powders. Both are great options.
- 2 teaspoon poppy seeds
- 1 tablespoon chia seeds
- ¼ cup maple syrup
- ¼ cup melted coconut oil
- juice of 1 lemon (approx. 2 Tbsp)
If you’re feeling a little fancy, stirring in some additional lemon zest makes them all the more delicious and tangy.
HOW DO I MAKE LEMON POPPY SEED PROTEIN BITES?
STEP 1: In a large bowl, combine almond flour, coconut flour, chia seeds and poppy seeds.
STEP 2: Stir in maple syrup, coconut oil and lemon juice. Mix until you have a moist, crumbly texture.
STEP 3: Using your hands, roll the dough into small balls. Place them on a plate and store in the refrigerator for about 30 minutes to set.
STEP 4: Store in an airtight container in your refrigerator or freezer. ENJOY!

I don't have coconut flour. Could I just add an equal amount of almond flour to replace the coconut flour?

You cannot substitute more almond flour for the coconut flour. Coconut flour absorbs liquid much more than the almond flour. I would stick with 1 cup of the almond flour, and possibly reduce the amount of coconut oil used at first. Start with 2 Tbsp of oil and see if you are able to form dough balls easily, without them crumbling. Let me know how it goes!

Also, could I get another measurement for the protein powder besides one scoop? My whey protein powder doesn't come with a scoop

Thanks for the message. 1 scoop of protein powder is typically 2-3 Tbsp. I would start with 2 Tbsp and see if you like the consistency of the bites.

Can I use almond meal instead of almond flour?

You can try it out. Almond meal is a lot more course and has a stronger flavor than almond flour. But it may be something you enjoy more. Just note the bites will not be as light.
