Protein, check! Espresso, check! Chocolate, check! Peppermint, check! I'm pretty sure these Peppermint Espresso Protein Balls have everything you could possibly want in a snack.
I am always looking for some healthy snack inspiration. If you are anything like me, when hunger strikes the last thing you want to do is spend time in the kitchen baking or cooking. All you want is a satisfying snack, NOW!
Good thing these Peppermint Espresso Protein Balls are no bake, have no refined sugar or flour and are packed with protein. In less than 15 minutes you will have a batch of delicious, perfectly portioned bites that will keep your tummy happy and your body moving.

HOW DO I MAKE PEPPERMINT ESPRESSO PROTEIN BALLS?
In a food processor or blender combine 2 cups of oats and ½ cup of raw cashews. Pulse until you have a flour-like consistency. Make sure you do not over mix the ingredients and end up with a creamy paste.
Next, in a large bowl, combine the oat/cashew flour with the following ingredients and mix well.
- 2 scoops of chocolate protein powder (approximately 52 grams)
- 2 tablespoon espresso grounds
- ⅓ cup natural peanut butter
- ¼ cup honey
- ¼ cup maple syrup
- 2 teaspoon peppermint extract
- ¼ cup coconut oil- melted
Form small balls with your hands and set on a plate or tray. Place the protein balls in your refrigerator for about 30-40 minutes to set (but I won't judge if you happen to sneak one before).
When you are finished, store them in an air tight container either in your refrigerator or freezer for whenever your craving strikes.
