This easy Shrimp Taco Bowl with beans, veggies and spices is the ultimate weeknight family dinner—no mess, no stress!

Whether it's a street taco, breakfast taco, vegetarian or filled with meat...I've never met a taco I didn't like. However, sometimes I'm not in the mood to deal with the mess of cleaning up after taco night. Especially under my kids chairs.
This Shrimp Taco Bowl has everything you love about tacos, without having to deal with messing fingers or tables. Made with fresh seafood, wholesome, good-for-you ingredients, it's perfect for a crowd or a quick weeknight meal.

WHAT INGREDIENTS DO I NEED?
- 1 lb raw medium shrimp - peeled & deveined
- ½ red onion - sliced
- 1 cup bell peppers (preferred colors) - sliced
- 15 oz black beans
- 15 oz corn
- 1 fresh jalapeno - chopped
- 2 tablespoon olive oil
- 1 oz taco seasoning packet
- salt & pepper
- Fresh cilantro, if desired
- Preferred base to your bowls: rice, cauliflower rice, or bed of lettuce

HOW DO I MAKE SHRIMP TACO BOWLS?
Season the shrimp with salt & pepper. Begin to heat olive oil in a large/deep skillet.
Add the shrimp to the skillet, sauté until pink and cooked through. Carefully remove from skillet and set aside for now.
Add the sliced onion, bell peppers and chopped jalapeño to the skillet. Continue to sauté until tender.

While the vegetables are cooking, open, drain and rinse the canned black beans and corn.
Return the shrimp to the skillet along with the corn and black beans. Stir in the taco seasoning.
Continue to sauté everything for another few minutes. Then remove skillet from heat.

To assemble the Shrimp Taco Bowls, simply layer the taco mixture over your preferred base. This could be rice, cauliflower rice, or a bed of lettuce. Then garnish with fresh cilantro.
